How to cook rays and sharks the Filipino way

Ingredients:

1 lb sting ray or shark
4 cups coconut milk
1 cup  moringa leaves 
1 medium sized onion, sliced
3 cloves garlic, crushed
crushed ginger
3/4 cup vinegar
3-5 pcs hot chili
Salt and pepper

How to prepare and cook rays and sharks

1. Boil the cut meat and add ginger for 10-15 minutes and wait until meat can be easily pulled off from the cartilages. 

2. Drain the water and let it cool. Peel skin off and flake the rays by pulling the meat from its cartilages.

3. Add flaked stingray or shark, vinegar, garlic, salt and pepper in a bowl. Soak the meat to the marinade then drain off vinegar after an hour completely.

4. In a medium heat, combine coconut cream, garlic, onion, salt and pepper.  Stir continuously. After about 5 minutes, add the flaked meat and moringa leaves. Simmer until coconut milk is almost dry.

5. Add more coconut milk, sliced hot chilis. Simmer til the coconut milk is almost dry.
